My Beetroot Canapés are simple and made with local ingredients. Roast beetroot is blended with Greek-style yogurt and herbs, strained for a thicker consistency then swirled atop brown bread rounds. A garnish of scallions, chives, and bundles of beetroot slivers finish it off. Served chilled.
