At 17 I won an all Ireland cookery competition ,ever since I have longed to pursue a career in food.Through that competition I won a week's cookery course in the prestigious Leith School of Food & Wine which was a wonderful experience.I studied Nutritional Science in college but I spent all my summers cooking in kitchens.I visited Ballymaloe cookery school in 1998 and ever since I have dreamed of doing the 12 week cookery course there. Chef Factor is the perfect opportunity to fulfill my dream!

My dish is a lovely light swiss roll which is filled with a vanilla mascarpone cream and delicious fresh raspberries which have been soaked in my tangy raspberry sauce. The swiss roll is drizzled with extra sauce and icing sugar and served with vanilla cream on the side.I used a fresh vanilla pod in the cream and scraped in the seeds.This swiss roll is so simple to make, tastes so yummy,so sit back and enjoy with a nice cup of tea.
