Since finishing college a couple years ago I've been struggling to find a job.My days became filled with thoughts of food,picking up tips from cooking shows and making meals for myself and my friends. I now know that this is the career path for me and I'm determined to make that happen. They say "if you do something you love. you'll never work a day in your life". This is what I want and the Cully & Sully competition is the perfect stepping stone into the world of food!

The red curry paste is made from scratch,using among other ingredients,fresh and dried chilies,galangal,shrimp paste and lemongrass. This is then fried in duck fat, coconut milk is added and the butternut squash and greenbeans are simmered in the aromatic curry sauce.The duck breast is seasoned with cumin and pan roasted.The rice is cooked in coconut water, which balances the curry and brings out the sweetness of the duck. The dish is garnished with fresh coriander and a lime cheek. Amazeballs!
